If you're going to be successful making sandwiches then you're going to need a few basic tools. You'll need some of these things daily. Others you'll just need occasionally.
Cutting Board
We use a medium size cutting board daily. Get something that is easily washable, as you may not have a dishwasher. I'd also suggest getting one with edges that prevent liquids from running off.
Knives
You really only need one knife, but there are times when you want both a sharp kitchen knife and a serrated-edge knife. We keep our knives in our desk, otherwise they would walk away anytime someone brought in a Costco Cake - which is more often than you would think.
Minature Slow Cooker
Sometimes we put the hot sandwich ingredients in a slow cooker in the morning, then they are hot and ready for you at lunch time. This actually can save you time heating ingredients in a microwave and you can get much better results. We like to use this for simmering meatballs, heating up sausages, or roasting pulled-pork.

Whether or not you'll need this will depend on your level of commitment to making your own toppings. We use this for marinating and fermenting. We actually use this more than you'd think. We use it for marinating mushrooms, for fermenting carrots and radishes, or for making our version of olive spread.
